BuckNola [Vegan, Oat Free, Gluten Free, Oil Free, Refined Sugar Free]


About a month ago I was browsing Instagram for some recipe inspiration and I discovered several of my favorite blogs making "RawNola" - basically raw granola using only a few healthy ingredients! It sounded so delicious and easy, but since I have a very sensitive form of Celiac Disease and cannot tolerate even gluten free oats, I couldn't make this nutritious treat. However, an idea popped into my head last week for an oat-free version, so I had to try it...and my experiment turned out amazing!! This version of RawNola is nutty and sweet with a chewy texture and slight crunch, making it a perfect topping for Nice Cream, porridge, pancakes, smoothies, yoghurt, or anything else you want!

Peanut Butter Banana Protein Flatbreads


With a busy schedule, eating healthy can sometimes be very difficult. We take advantage of convenience stores and their unhealthy but easy snacks, then feel sluggish, tired and guilty after the sugar high has worn off. Being a pancake lover, I’ve often thought how awesome and easy it would be to bring protein pancakes along as snacks during the day, but individual pancakes take so long to cook! These tasty flatbreads are essentially a baked pancake – super easy to make in large batches and the perfect snack to grab when you go out. Loaded with plant-based fiber, protein and healthy carbs, they’ll keep you satisfied during a mid-afternoon slump. If I’m home, I love warming them up and slathering on a layer of Crazy Richard's 100% naturalcrunchy peanut butter for an extra dose of delicious and filling nutrients.

Cinnamon Roll Protein Pancakes [Vegan, Gluten Free, Grain Free, Dairy Free, Nut Free]


After many failed attempts, I have FINALLY made the most perfect vegan and gluten free pancakes using protein powder! The trick was the flour - buckwheat was too dense and created dry, flat pancakes, and coconut flour was useless without real eggs. If you follow me on SnapChat (casey.roseee), you'll already know I used Garbanzo Bean Flour for these babies and it worked beautifully. Garbanzo beans are another name for chickpeas, a legume high in protein and fiber. Garbanzo bean flour is much lower in carbohydrates per serve than regular grain flours, much higher in protein, and delivers a great dose of healthy fats - perfect to keep your blood sugar stable throughout the morning. Pancakes are my favorite breakfast on weekend mornings when I have more time to cook. These pancakes are fluffy, delicious and super healthy, containing no gluten, nuts, animal products or artificial sweeteners of any kind. Just a few ingredients like buckwheat flour, MRM Vanilla Bean Veggie Elite protein, and organic soymilk combine to create these high protein and high fiber pancakes. Chocolate Mocha [No Bake] Protein Truffles




No-bake recipes are some of the fastest, easiest, most delicious and nutrient dense foods you can make! When you can just throw a handful of wholesome, plant-based ingredients into a food processor and create a delicious, decadent (but healthy!) treat, I call that a success. These truffles are just that – chocolatey, fudgy goodness! Loaded with plant protein and healthy fats, you can enjoy your dessert without the guilt. They’re perfect to bring to a party, to snack on at work, and are even healthy enough to eat post-workout!

Flourless Banana-PB-Chocolate Chunk Protein Blondies [Gluten Free + Vegan]


I think this may be the longest recipe title in the history of recipe titles, but I definitely needed to write it all out because banana + peanut butter + chocolate = the best flavor combination in the universe.

Now, you're probably thinking - these are blondies, how can they be healthy?! With a few natural, plant-based secret ingredients, these flourless, vegan, gluten free, high fiber and high protein blondies are a treat you don't have to feel guilty about!

More Flavors - Homemade "Quest-Style" Bars!



Ingredients:
   1 scoop MRM French Vanilla Egg White Protein Powder
   2 tbsp Vitafiber syrup
   1 tsp Beanilla Pistachio Flavor
   6 crushed pistachios
   1/4 tsp Organic Burst Chlorella Powder


Directions:
In a microwave-safe bowl, add the Vitafiber syrup and microwave for about 20 seconds until it begins to bubble. Add the Pistachio extract, pistachios, Chlorella Powder, and  French Vanilla protein powder, and mix with a spoon until it forms a dough. Wet your hands with warm water and mold into a rectangular shape, like a Quest Bar. Refrigerate for a couple hours to set.





Ingredients:   
   1 scoop MRM French Vanilla Egg White Protein Powder
   2 tbsp Vitafiber Syrup
   1 tsp Crazy Richard's cashew butter
   1 tsp Beanilla Coconut Flavor
   1 tsp unsweetened shredded coconut

Directions:
Follow directions in Pistachio Protein Bar recipe using these ingredients.

   2 tbsp Vitafiber syrup
   1 tsp lemon extract
   1 tsp Crazy Richard cashew butter


Directions:
Follow Pistachio Protein Bar instructions using these ingredients.

   2 tbsp Vitafiber Syrup
   5 dried, chopped strawberries

Directions:
Follow instructions for Pistachio Protein bar with these ingredients.
